The splendid white peach thyme Bellini at Ballard's Volterra, ideal when summer finally makes its dazzling debut

Bloody Marys and Irish coffees are ideal salves for chilly gray mornings, but when summer finally makes its dazzling debut, the splendid white peach thyme Bellini ($6) at Volterra is like a ray of sunshine caught in a Champagne flute. Local fresh white peaches are puréed at the height of their ripeness with peach bitters and shaken lightly, and then the whole mix is given a bracing Prosecco header that fizzes and sparkles. A sprig of fresh thyme adds just a little green-grass earthiness. These peachy beauties go down easy as cold lemonade on a smoldering summer day, and taste even better when sipped on Volterra’s pretty stone patio. You’ll find yourself wishing they sold them by the pitcher.
