Outdoors: Climbing the Walls

If you're climbing the walls in your house with all the bad weather this winter, maybe you should check out one of Seattle's indoor rock climbing gyms. Vertical World (daily rate for non-members: $16; monthly membership: $70) started it all off when it opened the doors on the world's first indoor climbing gym in Ballard back in 1987. Recipe: Lorna Yee's Crispy Sweetbreads with Tarragon and Lemon

2 whole veal sweetbreads, weighing about ½ pound each
1 tablespoon salt
Juice of 1 lemon
Water (for soaking)

1 cup flour
1 cup panko bread crumbs
1 teaspoon salt
½ teaspoon ground black pepper
