Chef Josh Henderson to open restaurant inside new downtown Thompson Seattle hotel

Scout, and its rooftop sibling, The Nest, will debut in the luxury hotel this summer

These days, construction cranes and Huxley Wallace Collective go together like peanut butter and jelly. As it is, we can barely keep track of owner-executive chef Josh Henderson’s projects. At last count, he had a half dozen restaurants opening in Seattle before spring.

Now comes news that Henderson, of Westward and Quality Athletics, is joining forces with Thompson Hotels, which is known for luxury properties in New York City, London, and Mexico City, to open Scout, a signature restaurant inside the group’s first Pacific Northwest property.

Thompson Seattle will debut downtown this summer at 110 Stewart Street (corner of 1st Avenue), adjacent to all Pike Place Market entrances. So far, we know that the restaurant will be anchored by a large chef’s table doing hyperlocal, market-driven dishes for breakfast, lunch and dinner. We’re most excited about The Nest, a giant, scenic rooftop bar and lounge. The focus there will be shareable plates and craft cocktails and what we imagine will be sweeping views of Puget Sound and the Olympic Mountains. Think Ethan Stowell’s Goldfinch Tavern inside the Four Seasons crossed with Mbar, the soon-to-open South Lake Union rooftop restaurant from the Mamnoon folks.

In a press release, Henderson said he’s thrilled “to introduce a new point of view in hotel dining that will have travelers and locals seeing our city and the Pacific Northwest in really interesting ways.”
