Comfort Food: Seattle's Best Cassoulet
Cassoulet at cafe Campagne
When autumn gives way to winter, our thoughts turn to Cafe Campagne’s fragrant, meaty cassoulet special. Worth every cent of its $23 price tag, this labor-intensive dish originating in the south of France would take an intrepid home cook at least two days to prepare from scratch. Luckily, chef Daisley Gordon and his talented team have done the work for you by layering duck confit, herbed lamb, garlicky sausage and tender pieces of pork shoulder in a pot of white beans. For about the same price, and with 24 hours notice, you can get a take-home order of cassoulet to assemble in your own kitchen. This special dish is available until mid-April.
