Recipe of the Week: Curried Chickpea Toast

Heather Christo's delicious (and healthy) take on toast is to die for

Did you know chickpeas are rich in fiber, iron and a great source of protein? Or that avocados contain nearly 20 vitamins and minerals, making it one of the most nutrient-rich fruits (yes, fruit) you can eat?

Well, local food blogger and former chef Heather Christo has a recipe that is not only delicious, but also combines the health benefits of these tasty ingredients. It’s called Curried Chickpea Toast.

“Curry powder, lime and avocado smash up into the most delicious rich and fragrant guacamole and then the spicy kick of red chili and raw garlic with the creamy chickpeas is the best topping ever,” she says.

Don’t just take her word for it. You can eat it for lunch, as a snack or serve it as an appetizer.

Ingredients

  • 2 pieces toast
  • ½ avocado
  • ½ teaspoon curry powder
  • lime juice
  • kosher salt
  • ½ cup of canned chickpeas, rinsed and drained
  • 2 tablespoons olive oil
  • 1 clove garlic minced or grated
  • ¼ teaspoon red pepper flakes
  • ½ red fresno chili, thinly sliced
  • 2 green onions, thinly sliced
  • kosher salt

Instructions

  1. In a small bowl smash together the avocado with the curry powder some lime juice and kosher salt to taste.
  2. In a separate small bowl combine the chickpeas, olive oil, red pepper flakes, chili and green onions. Sprinkle with kosher salt to taste.
  3. Top each piece of toast with the smashed avocado and then top with a generous heap of spicy chickpeas.
