Recipe of the Week: Healthy Baked Potato Chips

No Seahawks game day celebration is complete without potato chips. And we’re not just talking any chips here—think a homemade baked variety that is much healthier and easy to make.

We present you these Baked Potato Chips from food blogger Mackenzie Schieck of Pine and Crave.

“These salty bites—that are a much healthier option than those bags that are about $5 a pop—are ready in about 25 minutes, and your oven does most of the work,” Schieck says.

If you’re looking for a delicious, protein-rich rich spread to dip them in, try her dill spread, the sauce part of her beet pasta recipe.

Mackenzie’s Healthy Baked Potato Chips

Ingredients

  • 2 medium red potatoes (or one russet potato)
  • 1 tablespoon olive oil
  • Salt, to taste

Directions

  1. Preheat oven to 450 degrees F.
  2. Use a mandolin to make thin potato slices. (I have a mandolin with three settings, and I used the middle one—so, thin, but not the thinnest possible.)
  3. In a Ziplock, toss the potato slices with the olive oil.
  4. On a cookie sheet lined with parchment paper, lay out all the potato slices (avoid overlapping them—just the edges, if anything), then season with salt.
  5. Cook in preheated oven until most of each slice is golden brown, 20 to 22 minutes.
  6. Cool (should only take 5 minutes or so), sprinkle with a little more salt, then serve. (Store in air-tight container.)
