Linda Derschang dreams up Smith, her new hipster hangout.

Restaurant Zoë’s (Belltown; 2137 Second Ave.; 206.256.2060) chef and owner, Scott Staples, is finally opening up a second restaurant, this time on Capitol Hill. Inspired by the Spotted Pig in New York and other gastropubs (informal pub atmosphere—outrageously good food), he’s bringing the experience to Seattle. His new restaurant, Quinn’s, will be located in the old La Puerta space (Capitol Hill; 1001 E Pike St.) and is due to open in October. It will be “unapologetically meat driven,” says Staples, with high-end burgers, “a bar steak,” pâtés, terrines, sausages, and other carnal treats. To drink, there will be a full bar, 12 beer taps and a wine list of predominantly half bottles.

Long a Pine Street standby of the young, the cool, the drunk and the hungry, Bimbo’s Bitchin’ Burrito Kitchen—and sister drinking hole the Cha Cha Lounge—have a slightly different name and a new home just up the street (1013 E Pike St.; 206.322.9950); the new space was set to open in June. Bimbo’s Cantina will be more of a bar than its old location. “Tijuana Taco Shack is the vibe, with a very rustic craziness,” says Wade Weigel, who is co-owner with Jeff Ofelt. It will have lots of slurpy margaritas to offset the salsa and tortillas. Downstairs from Bimbo’s (with an entrance in the alley) the Cha Cha Lounge (1013 E Pike St., downstairs) will maintain its tiki-punk aesthetic, with lots of bamboo, lots of thatch and a stucco wall embedded with beer bottles.
