Vancouver, British Columbia–based Meat & Bread offers four lavish sandwiches for lunch, but it is the heavenly porchetta ($10)—a menu staple, thank goodness—that wooed my taste buds at the deli’s first American outpost.

As you enter this Capitol Hill counter-service spot, where exposed iron beams and vaulted, wood-slatted ceilings show off the Central Agency Building’s industrial roots, you spot the source: a slab of moist, slow-roasted boneless pork carved to order. What sets the soft, ciabatta sammie apart is the addition of kicky salsa verde and finely crushed pork cracklings (yes, the topping of champions). Savory flavors, surprising textures and nary a drop of grease make this one heck of a sandwich seduction. Oh, Canada, indeed. Capitol Hill, 1201 10th Ave.; meatandbread.ca
