Since its opening in the summer of 2009, Fuji Bakery has delighted us with treats like the crisp, buttery green tea Danish and light, creamy brioche chocolat. Food editor Allison Scheff raved about Fuji in our February issue, and since then the accolades have been piling up.
With two locations serving up the International District and Bellevue, owner Akihiro Nakamura tweeted on July 22 that “our kitchen is getting small and we’re looking for a location for a new Fuji Bakery & Café.”
But where? For the third storefront, Nakamura hopes to expand the usual grab-and-go layout into a café where customers can sit and enjoy their pastries, sandwiches and coffee. Wallingford and Ballard are the bakery's top picks, though Nakamura claims Ballard is “so expensive,” and he’s looking into Capitol Hill as another option.
