A combination of chewy, warm red rice and quinoa hides beneath crunchy house-made kale chips, savory bits of Bella burger (a vegan burger Thrive makes in-house), marinated mushrooms, cool cucumbers and a drizzle of garlicky cilantro sauce. The best part: a scoop of thick, buttery cashew-onion cream to dot on everything. Healthy, yes, but so, so good. I could almost do cartwheels all the way home.
