Rachel’s Ginger Beer ups the local offerings at Pike Place Market

Though they may drive us crazy during the summer influx, Pike Place Market tourists must be admired for their zeal for all things “made in Seattle.” Now they can quench that thirst with a tart, cold, locally crafted beverage at Rachel’s Ginger Beer Market, a soda fountain slated to open in Post Alley’s former Seattle’s Best Coffee spot on July 14*. Rachel’s Ginger Beer (RGB) stars in many a cocktail around town, most notably at proprietress Rachel Marshall’s friendly Capitol Hill dive bar, Montana, where the sharp nectar (like root beer, ginger beer is nonalcoholic) is mixed with vodka and fresh lime to make an incomparable Moscow mule, served on tap. At the Pike Place outpost, folks can hop onto stools and sip one of the five seasonal ginger beer flavors (such as raspberry, apple/kale and carrot/beet) or grown-up drinks. This summer, consider the locavore picnic route: Stop by Beecher’s for cheese, Le Panier for a baguette, add farm-fresh fruit from local growers and a growler of RGB and head to a sunny park.
*UPDATE: Rachel’s Ginger Beer has moved its opening date to July 23.
