BASTILLE CAFÉ & BAR
Local ingredients are key to Bastille’s menu, and the smoked salmon omlette is no exception, with organic eggs from Yelm, salmon from the Ballard Market (smoked in-house!), milk from Lynden (for the house-made fromage blanc) and herbs from the café’s rooftop garden. $14. CAFÉ PRESSE

GERALDINE’S COUNTER
The sweet white corn, havarti & herb scramble from Columbia City favorite Geraldine’s Counter is exactly what it sounds like, which is to say nothing short of amazing. THE DISH CAFE
The Dish restaurant may be small itself, but this dish definitely is not. Filled with crisp bacon, sautéed tomatoes, fresh spinach and Parmesan, the Seattle to Portland omelette could certainly hold you over for a road trip. $8.95. Fremont/Ballard, 4358 Leary Way NW; 206.782.9985

LOLA
The chefs at Lola rotate dishes based on seasonal ingredients, and that’s true for their sometimes elusive, but always tantalizing truffled cremini omelette. Sautéed in olive oil and finished with truffle oil and a pinch of salt and pepper, the cremini mushrooms are the unquestionable stars. $15.
