Chelsea Keene and Chris Olson of The Cookie Counter make the best vegan ice cream in town.

If you haven’t experienced their creamy, organic, coconut-milk-based ice cream sandwiches sold from their roving (June–September) blue 1974 Volkswagen bus named Mavis, take heart: You can now customize your own sammie ($5) at the couple’s new 850-square-foot café, which opened in April across the street from Bluebird Ice Cream on Phinney Ridge.

Promise me you’ll try the Creamsicle-like lemon ice cream with snickerdoodles. The cookies—wonderfully chewy—are vegan, too. Also look for cinnamon rolls, pies and gluten-free shortbreads, plus happy-hour milk (vegan, of course) and cookies. That’s my sweet spot.
